Cranberry, Apple, & Butternut Squash Succotash

“Succotash” consists of beans and corn, but I thought the name for the random combo was also appropriate for this dish.

  • 1 bag fresh cranberries
  • 1 butternut squash, cut into 1 inch cubes
  • 1 apple, cut into 1 inch cubes
  • sugar, to taste (I used about 1/4 cup and it was still a little tart)
  • 1 t. cinnamon
  • 1/2 t. nutmeg
  • 1 t. vanilla
  • dash pumpkin pie spice


  1. Place cranberries, butternut, and apple into a stockpot and add water to cover (you could also use apple juice or cider). 
  2. Simmer until cranberries pop.
  3. Drain most of the water from the pot and continue to simmer until everything is soft. 
  4. Drain the rest of the water and add sugar and seasonings. 
  5. Mix well and serve.
