Pineapple Salsa

I love fruit salsas – the combo of sweet and spicy when paired with something salty (like a chip or cracker) is awesome.  This one is easy to make and pretty versatile.

  • 1 fresh cut pineapple, diced (about 1-1/2 c.)
  • 1 jalepeno, finely minced
  • 2-4 T.lime juice, fresh squeezed
  • 3-4 T. cilantro, finely diced
  • 1/4 c. red onion, finely diced
  • 1/4 c. red bell pepper, finely diced
  • 1-2 tsp. honey

 

Grill pineapple 2-3 minutes per side until carmelized.  Set aside to cool.

Once pineapple is cool, dice and mix with other ingredients.  Refrigerate for at least 45 minutes to meld flavors.
